Bake with me: Chocolate cupcake recipe with Mocha frosting

Hi sweeties! I'm such a fan of sweets specially chocolates! So today I would like to share to you my Easy Homemade Chocolate cupcake with Mocha frosting recipe. Enjoy!



Chocolate Cupcake recipe:

Yield: 8 - 10 servings
Difficulty: Easy

Ingredients:

3 Tbsp             Butter
1 cup               Boiling Water
1 1/2 cup         All purpose flour
1 1/3 cup         Brown sugar
1 1/2 cup         Antonio Pueo ground chocolate or any chocolate powder
1 tsp                Baking soda
1/4 tsp             Fine salt
2 pcs               Fresh eggs
1/3 cup           All purpose cream
1/2 tsp            Vinegar
1 tsp               Vanilla extract



Procedure:
  1. Preheat oven 350 F or 180 C for at least 15 mins before baking
  2. In a small bowl mix cream with vinegar.


      3. In a medium sized mixing bowl, combine chocolate powder, butter and boiling water. Stir until chocolate and butter is melted.


   4. In a large mixing bowl, combine flour, brown sugar, baking soda and salt. Take a fork or wire whisk and stir. Blend thoroughly.


     5. Blend eggs in, cream with vinegar, and vanilla. Beat vigorously by hand for 2 minutes or with electric mixer on medium speed for 1 minute.
        6. Fold in all the remaining ingredients together.


     7, Pour batter into the prepared cupcake tray. Bake for 35 to 40 minutes or until cake tester comes out clean. Cool completely before putting frosting.


Tada! Done baking! It looks good and smells so yummy!

You can put frosting or not. It's up to you, but for me I decided to put some frosting on my cupcake and here's the recipe:

Mocha Frosting Recipe:

Prep time: 10 mins
Difficulty; Easy

Ingredients:

2 tbsp         Warm Milk
1/2 tsp         Instant coffee powder
16 oz           Confectioner's sugar
6 tbsp          Melted butter
1/4 cup        Unsweetened cocoa powder
1 1/2 tsp      Vanilla extract

Procedure:

  1. Stir warm milk and coffee powder in large bowl until the coffee dissolves completely.
  2. Whisk confectioners' sugar, melted butter, cocoa powder, and vanilla extract into the milk mixture until no clumps remain and you have a smooth frosting.
